Famed for its complex and delicate taste this highly perishable lobster is one of the most difficult crustaceans to transport live from sea to saucepan.

But the effort is worth it. Growing to around 30cm the langoustines white meat has an enticingly deep flavour with a perfect balance of saltiness and sweetness. The texture is crisp and firm, with a consistency you will not find in other lobsters.
