Skates are closely related to rays are sharks, that spend most of their time lying on the ocean floor. Their pectoral fins (the edible part of the fish) are so greatly exaggerated they are also known as“wings”. 

The white striated flesh is sweet in flavour and has a crabmeat-like texture that is delicate and meaty. It tastes like a succulent white fish with a slight nutty flavour.
