Our Red caviar is made from the roe of Canadian wild salmon, that has been washed and salted, the same mallosol process as black caviar. This turns its tone of the eggs from misty into clear and glossy.

The orangey-red colour is the synonymous with salmon roe, but it’s not just the colour that sets it apart from black caviar it is the taste, slightly salty, slightly sweet, with a hint of brine. It is also much firmer than black caviar and makes a trademark popping sound when you press it against the roof of your mouth with your tongue.

 It is a well known fact that the aristocracy love sturgeon caviar, but there is nothing wrong with a slice of toast, some crème-fresh and a good bit of red caviar on top as a great alternative.
