The Siberian sturgeon is one of the smallest sturgeons in the world, native to the fluvial basins of Siberia. It matures in around five years, producing firm pearls that vary in size depending on age, and are dark grey to amber in colour. It is loved by gourmands for its versatility being very distinctive and full of character.
