Snapper belongs to the sea bream family, and is New Zealand’s most iconic species. Prized for its colourful golden scales with light blue spots.
Our snapper are caught via long-line, from day-boat fleets. Resulting in the best-quality fish imaginable, and is found in many high-end dining establishments.
New Zealand snapper is rich in a naturally occurring amino acid called glycine which results in its characteristic sweet flavor. The flesh is light with a pinkish tinge, and cooks up white, with a medium flake and texture.
