Our Rainbow trout (Oncorhynchus mykiss) spend there lives in the intensely cold high mountain lakes of the Italian Alps. The growth of these “mountain fish” is slowed down by the low temperatures of the water, taking several years to mature. Surviving in such harsh conditions does have its rewards, the flesh has large succulent flakes that is delicate in taste and perfect for smoking.

 

Average weight per side: 800-1kg

 

Storage: Ready to eat. Keep refrigerated at 0°C to 4°C and consume within four days after opening the sealed pack. Consume before the sell by date.
Product may be frozen. Freeze on day of purchase. Defrost before eating.

Caution: Although care has been taken to remove all bones, some small ones may remain.
