Our Alpine Arctic Char (Salvelinus umbla) comes from the high alpine lakes and rivers of the Italian Alps, where they thrive in the freezing waters of below -5˚C. Taking up to five years to mature these fish have a delicate taste, somewhere in-between salmon and trout.
Once mature we hand select only fish of perfect size and maturity for processing. They are then carefully cured with a mineral rich Italian salt, gently dried and smoked with a selection of fragrant wood chips in accordance with traditional customs.
Average size per side is 1.2-1.5kg
Storage: Ready to eat. Keep refrigerated at 0°C to 4°C and consume within four days after opening the sealed pack. Consume before the sell by date.
Product may be frozen. Freeze on day of purchase. Defrost before eating.
Caution: Although care has been taken to remove all bones, some small ones may remain.
