Our Antarctic toothfish spend the lives in the dark frigid waters of the Antarctic at a depth of 800-1500 metres. But they can be found to depths of 2200 metres.
The steaks perfectly balance flavour and texture, with snow-white succulent large flakes melt in the mouth releasing a clean, sweet taste with hints of umami — which is why it’s sometimes likened to the characteristics of wagyu, and is consistently a chef favourite.
