Our King Scallops are sustainably farmed in the waters around the Shetland islands, Scotland and Norway The frigid conditions and turbulent weather creates perfect conditions for bountiful harvests of King Scallops and other shellfish.
The Scallops are shipped live and placed in our specially designed storage tanks, where they are kept alive, ensuring that the scallops are as fresh as they possibly can be, until it is time for smoking.
We carefully hand shuck and wash each scallop, leaving only the tender muscle within the shell. They are then gently hot smoked with a selection of fragrant wood chips in accordance with traditional customs, until the meat takes on a smokey aroma and soft creamy texture.
Storage: Ready to eat. Keep refrigerated at 0°C to 4°C and consume within four days after opening the sealed pack. Consume before the sell by date.
Product may be frozen. Freeze on day of purchase. Defrost before eating.
Caution: Although care has been taken to remove all shells, some small ones may remain.
