It’s a flavourful versatile cut of beef, which is very lean and contains almost no fat. It’s about a foot long and one inch thick, and can be cooked whole rather than divided into smaller individual steaks and  is delicious if cooked correctly. It is best grilled over high heat or slow-braised.
