Our veal is so tender it melts in the mouth, it is leaner than poultry, has as much protein as beef, and is easy to cook at home.
Because of the stigma, many customers shy away from veal. Happily, these days, our farmers use more humane options for raising veal — the calves are happily raised free-range, on pastures.
Veal has very little to no marbling. Marbling is often evaluated on the cut surface, and is most important in the flavour and juiciness, it has a velvety, fine grained texture, very tender and delicate taste.
